Verpiand's vison for this restaurant is French food that is not heavy or pretentious. He accomplishes this by applying his throughly modern techniques to classical French plates.

Verpiand who is San Diego native, was born in the France and introduced to the world of cooking by his father. He later went to culinary school at the prestigious French culinary school of Avignon, where he learned the techniques which would later make his French restaurant in San Diego-and now Houston-famous.
